Spooky Squash Soup

We are full-on into Fall and I don’t know about you, but I just love this season.  So much so. <3 There is something so refreshing and peaceful about the leaves changing, dusk falling sooner and the cool crisp air.  After the busy and lively summer months, Autumn carries with it a welcome breath of stillness as we slow down and prepare for the colder months ahead.  

Of course I love Fall so much because it means the official arrival of soup season in my kitchen. Ye-ah!!!! There is nothing better to me than a warm, hearty bowl of soup with some yummy toppings and toasty bread on a cold crisp day.  

This Soup is incredibly simple to prepare and has quickly become one of my and my client’s soup favs.  It is also the perfect accompaniment to Halloween dinner and the kids totally love it.   Enjoy 🙂

Spooky Squash Soup

  • 1 large squash {butternut, Kabocha, acorn, hubbard are all yummy}
  • 1 sweet potato
  • 1 carton veggie broth
  • 2 cans full-fat coconut milk
  • Curry powder, ginger, turmeric, salt & pepper to taste

Peel squash and sweet potato if not organic and boil in pot of water until you can pierce with a fork.  Blend in high-speed blender with remaining ingredients.  Adjust seasonings to taste.  Note soup flavors will meld more over time so I often make my soup the night before I am going to serve 🙂

Cashew Cream

  • 1 cup cashews
  • juice from 1/2 lemon
  • salt & pepper to taste
  • water, as needed

Place the cashews, lemon and seasonings in a high-speed blender.  Add water in 2 Tbsp increments until mixture is smooth and creamy like yogurt or sour cream.

To make the spider web on top and scoop the cashew creame into a ziploc baggie or piping bag if you have.  Cut a small corner in the bottom of the ziploc and use that to pipe out the cream into circles – starting small in the center and getting larger on the edges.  Then using a toothpick or knife, start in the middle of the circle and draw straight lines out to the edges of the bowl. You will drag the cream with you creating the spider web look – I did 9 lines on mine.  It doesn’t need to look perfect; a bit messy goes perfect for today 🙂
